Ingredients

  • 6 Tbsp. oil
  • 1 med onion minced
  • 2 x tomatoes minced
  • 2 Tbsp. curry pwdr
  • 2 Tbsp. soy sauce
  • 2 tsp chopped peeled fresh ginger
  • 2 x garlic cloves chopped
  • 1 tsp grnd turmeric
  • 1 tsp chili pwdr
  • 1/2 lb boiling potatoes cut into 1-inch cubes
  • 1 c. canned chicken broth
  • 1 Tbsp. dry white wine
  • 2 lb boneless skinless chicken breast halves cut into 2-inch pcs Salt and pepper

Directions

  1. Heat 6 Tbsp. oil in wok or possibly heavy large skillet over medium-high heat. Add in onion and stir-fry till translucent/soft, about 5 min. Add in tomatoes and next 6 ingredients and stir 4 min. Fold in potatoes, broth and wine. Cover and simmer 10 min. Add in chicken; cover and cook
  2. till potatoes are tender and chicken is cooked through, about 10 min.
  3. Season to taste with salt and freshly grnd pepper.
  4. Serves 4.
