A basic and delicious version of the popular Chinese cookie - minus the lard! I prefer sliced almonds throughout the dough rather than the single almond on top as we often see on those at Chinese buffets.

Directions

  1. In large mixing bowl, beat together the butter and sugar until light and fluffy. Beat in egg. Add almond extract, flour, baking soda, salt and almonds, stirring until well combined.
  2. Roll into one-inch size balls and place 2 inches apart on ungreased baking sheet. Press down lightly to flatten but don't smash.
  3. Bake at 350 degrees for 10-13 minutes, until bottoms of cookies are golden brown (tops will still be creamy white). Remove cookies to cool on rack. Makes about 40 cookies.
