Ingredients

  • 1 large brinjal, cut into thick strip
  • 2 pcs erynggi mushroom. sliced
  • 2 tsp chopped fresh chillies
  • 1 tbsp mushroom sauce
  • 1 tsp miso
  • salt and pepper
  • 2 tbsp water
  • Oil for deep frying
  • 2 tbsp of plain flour

Recipe:

  • 1 large brinjal, cut into thick strip
  • 2 pcs erynggi mushroom. sliced
  • 2 tsp chopped fresh chillies
  • 1 tbsp mushroom sauce
  • 1 tsp miso
  • salt and pepper
  • 2 tbsp water
  • Oil for deep frying
  • 2 tbsp of plain flour

Soak cut brinjals in salt water to prevent oxidation. Pat dry with clean cloth or kitchen paper and mix into flour. Heat up oil in a wok and deep fried the brinjals. Set aside.

Drain oil into strainer. Add mushroom, water and mushroom sauce into wok and stir fry for 2 mins. Mix in the deep fried brinjals and add the chopped chillies and seasoning. Stir fry for 1 min. Turn off heat and add in miso, mix evenly. Serve.
