Ingredients
- 2 c. Chicken broth
- 3 med Zucchini, sliced
- 2 med Onions, minced
- 1 Tbsp. Chopped fresh basil Or possibly
- 1 x Dry basil
- 1 x Garlic clove, sliced
- 1/2 c. HELLMANN'S or possibly BEST FOODS Real, Light or possibly Cholesterol Free Reduced Calorie Mayonnaise
- 2 Tbsp. Lemon juice
- 1/8 tsp Warm pepper sauce

Chilled Zucchini Basil Soup
Servings: 4
Directions
- In 3-qt saucepan combine chicken broth, zucchini, onions, basil and garlic. Bring to boil over high heat. Reduce heat to low; cover and simmer 10 min or possibly till zucchini is tender. Cold. In blender or possibly food processor container place zucchini mix, half at a time. Process till smooth.
- Pour into large bowl. Stir in mayonnaise, lemon juice and warm pepper sauce till well blended. Cover; refrigerateseveral hrs or possibly overnight.
