Chilled Watermelon Soup (Paleo-friendly)

Quick, easy and unique paleo soup that will certainly cool you down in the summer heat. This is a great way to change the way you consume your fruit and use it to create a blast of delicious flavors.

Ingredients

  • 5 cups seedless watermelon (remove rind)
  • 4 medjool dates (pitted)
  • 2 teaspoons fresh ginger (minced)
  • ¼ cup fresh lime juice
  • 10 large mint leaves
  • ¾ teaspoon sea salt
  • 10 ice cubes
  • 4 wedges of fresh lime or a sprig of mint for garnish, if desired

Directions

  1. Place all ingredients into a food processor or high powered blender.
  2. Put the blender on high and combine the ingredients for approximately 30 seconds or until fully mixed.
  3. NOTE: Occasionally, the leaves may require a little more blend time to become finely chopped.
  4. Pour into bowls and sprinkle with sesame seeds or garnish with lime wedge as desired and serve.
