Directions

  1. Heat the oil in a pan, add in the onion, garlic and cook.
  2. Add in the tomatoes, wine, rosemary, bay leaf, currants, sugar and seasoning. Add in the langoustines and cook for 4-5 min. Remove from the heat and add in the vinegar and extra oil. Place into a clean bowl, cold rapidly and chill overnight.
  3. Serve in a large glass with slices of lime and parsley.
