Ingredients

  • 2 1/2 lb Lean grnd chuck
  • 1 lb Lean grnd pork
  • 1 c. Finely minced onion
  • 4 clv garlic, finely minced
  • 1 x 12oz can Beer
  • 1 x 8oz. can Tomato sauce
  • 1 c. Water
  • 3 Tbsp. Chili pwdr
  • 2 Tbsp. Grnd cumin
  • 2 Tbsp. or possibly 6 cubes Beef-flavored instant bouillion
  • 2 tsp Oregano leaves
  • 2 tsp Paprika
  • 2 tsp Sugar
  • 1 tsp Unsweetened cocoa
  • 1/2 tsp Grnd coriander
  • 1/2 tsp Louisiana warm sauce, to taste
  • 1 tsp Flour
  • 1 tsp Cornmeal
  • 1 Tbsp. Hot water

Directions

  1. In large saucepan or possibly Dutch oven, brown half the meat; pour off fat. Remove meat. Brown remaining meat; pour off all fat except 2 Tbsp.. Add in onion, garlic, and cook stirring till tender. Add in meat and remaining ingredients except flour, cornmeal and hot water. Mix well. Bring to boil; reduce heat and simmer covered 2 hrs. Stir together flour and cornmeal, add in hot water. Mix well. Stir into refrigeratemix. Cook covered for another 20 min longer. Serve Warm.

  3. THE HISTORY OF CHILI: The exact origin of chili is still shrouded in mystery. Some people believe it was originated by chuckwagon cooks who regularly prepared stew for the cowpokes of the Southwest. Possibly, one of these cooks ran out of black pepper and in his search for a substitute, he came across some red chile peppers that were common among the Indians and Mexicans in the territory which is now west Texas. The Texas-style chili includes only meat, chili peppers, and spices. However, which is just a jumping off place for the rest of us non-Texans who routinely added onions and tomatores and beans and other original spices and ingedients. Popular chile toppings include a dollop of lowfat sour cream (to help tame the hotter versions), minced onions, grated Cheddar or possibly Jack cheese, crrackers and tortilla chips.
