Chili's Southwestern Egg Rolls (Top Secret) Recipe

  1. Grill chicken. Set aside to cold. When cooled, cut into dices. (I also use leftover chicken, turkey or possibly canned chicken in this recipe - it all tastes great)
  2. Preheat 1-Tbsp. vegetable oil in medium-size skillet over medium-high heat. Add in red pepper and onion and saute/fry for a couple min till tender. Add in chicken to pan. Add in corn, black beans, spinach, jalapeno peppers, parsley, cumin, chili pwdr, salt and cayenne pepper to pan. Cook for another 4 minutes. Stir well so spinach separates and is incorporated into the mix (so no one can tell it's in there!). Remove pan from heat and add in the cheese. Stir till cheese is melted. Set aside.
  3. Wrap tortillas in moist cloth and microwave on high for 1-1/2 min or possibly till warm. Divide the mix into the center of the tortillas. Mix in the ends into an envelope or possibly roll into egg roll shapes. Secure with toothpicks to hold together. Preheat 1/4 inch canola oil in electric skillet to 375 degrees.
  4. Meanwhile, prepare avocado dipping sauce by mashing avocado and combining all ingredients in small bowl. Chill till egg rolls are done.
  5. Fry egg rolls, half at a time, till light brown on one side, flip and brown the other side. It does not take long as the mix is still warm. Drain and serve with dipping sauce!
  6. Note: Now, you can do these another way: you can freeze and use later for a party or possibly dinner guests. Heat deep fryer to 375 degrees and cook egg rolls about 12-15 min. Remove to paper towels or possibly a rack to drain for about 2 min.
  7. Jo Says: This is our family's favorite meal. We have it at least once a week. There is a lot of gathering of ingredients initially. I usually collect the cooked chicken, beans, spinach, onions (everything except the cheese) into several batches and freeze for later use. I put them into baggies and they thaw quickly for use. IEput everything into the skillet at one time and do the initial sauteeing. Then it is truly a fast meal.
  8. This sounds complicated because of the number of ingredients. I ready the pepper and onions in a small bowl. I put all the other ingredients in a larger bowl. Then follow the directions. It only takes a few min to cook. I roll the egg rolls and set aside while heating the skillet; I also mix the dipping sauce while the skillet heats.
  9. From start to finish, it takes no more than 30 min!!!!!! Our favorite meal, too!!!!!
