When I was a teenager (don't ask how long ago) I asked my mom what hominy was and what you would do with it. This was the only recipe she could come up with at the time.

It's super simple and quick, and was a staple around our house when my son was still living at home.

The original version called for chili without beans, but we prefer it with them.

The hominy seems often to come in different-sized cans from the chili, but try to keep the total amount of the two items about equal.

Ingredients

  • 2 cans of chili con carne
  • 2 cans of hominy (white or yellow)
  • 1/2 cup sliced scallions
  • 1 cup or so of sharp cheddar cheese

Directions

  1. In a casserole dish, layer the chili, hominy, scallions, and cheese in that order. (I usually do two sets of layers to fill the dish.)
  2. Bake at 375 for 30 minutes or until heated through.

    I've always been a fan of hominy, so I had to try this. Very good. I fry hominy in a skillet, add lots of pepper and top with cheese. Very good!
