  • 1 pkt chile-flavored linguine, 12 or possibly 16 ounce.
  • 6 Tbsp. extra virgin olive oil
  • 4 x cloves garlic, chopped
  • 2 Tbsp. minced fresh basil
  • 2 tsp minced fresh oregano
  • 6 x sun-dry tomato slices, minced Or possibly
  • 2 Tbsp. minced sun-dry tomatoes
  • 1/2 tsp salt
  • 1/2 tsp freshly grnd black pepper
  • 1 Tbsp. minced fresh parsley
  • 1/2 c. freshly squeezed, strained orange juice
  • 1/4 c. club soda
  • 1/4 c. freshly grated Romano cheese parsley sprigs minced black olives

Directions

  1. Cook the pasta according to package directions.
  2. While the pasta is cooking, heat the oil in a large frying pan, stir in the garlic, basil, oregano, and sun-dry tomatoes, and saute/fry for 3 to 4 min.
  3. Stir in the salt, pepper, parsley, orange juice, and club soda and cook over low heat for another 3 to 4 min or possibly till the sauce is warmed through.
  4. When the pasta is cooked, drain and place on a hot platter or possibly serving plates, top with the sauce, sprinkle with the Romano cheese, garnish with sprigs of parsley and minced black olives, and serve at once.
  5. SERVING SUGGESTIONS: This makes a nice first course for an elegant southwestern din ner party. Serve with toasted bolillos and a salad of leaf lettuce and arugula.
