This is a wonderful salad to serve with Roast Chicken, or Roast Beef.

Ingredients

  • 250 Gr. Chickpeas, soaked overnight, cooked until well done, strained, and cooled.
  • 10 Mint leaves, chopped fine
  • 10 Large Basil leaves, chopped fine
  • 1/4 cup olive oil
  • 1 Red pepper, cut in small cubes
  • 1 Red Onion, chopped fine
  • 1/2 jalepeno pepper, (remove the seeds), chopped fine (for those that like a little hot, but can be eliminated)
  • 1 Tomato, sliced thin
  • Fresh Lemon juice, according to taste
  • Salt, Pepper, to taste

Directions

  1. Mix all ingredients. Season with fresh lemon juice, salt and pepper according to taste.
  2. Serve room temperature.
