Ingredients

  • This is my family's favorite chicken recipe.
  • 4 x skinless, boneless chicken breasts
  • 1/2 c. flour, seasoned with salt and pepper
  • 3 Tbsp. extra virgin olive oil
  • 1 sm onion, finely minced
  • 1 can cream of celery soup
  • 1 c. lowfat milk
  • 1/2 tsp dry thyme
  • 1/4 tsp grnd cumin

Directions

  1. Dredge the chicken pcs in the flour, and brown thoroughly in the extra virgin olive oil. Remove chicken from pan and saute/fry onion in remaining oil(you can add in more oil if necessary)till brown. Add in celery soup, thyme and cumin plus salt and pepper to taste.
  2. Stir in lowfat milk, bring to a boil and then return chicken to pan. Cover and simmer over very low heat for 30 min, stirring often. Serve over rice.
