Chicken Stew With Peanut Sauce

Ingredients

  • 8 x skinned chicken drumsticks
  • 1/8 tsp salt
  • 1/8 tsp freshly-grnd black pepper
  • 2 x cloves chopped garlic
  • 1 tsp chili pwdr
  • 2 med sweet potatoes peeled, and cut into 3/4" chunks
  • 1 can stewed tomatoes - (14 1/2 ounce)
  • 1 c. frzn tiny green peas
  • 1/4 c. reduced-fat peanut butter
  • 1/4 c. water
  • 1 Tbsp. fresh lemon juice

Chicken Stew With Peanut Sauce

Directions

  1. Season chicken with salt and pepper. Coat nonstick skillet with cooking spray and heat over medium-high heat; add in chicken and cook 3 min till browned. Sprinkle 1 side of chicken with garlic and chili pwdr; turn chicken and cook 30 seconds or possibly till fragrant.
  2. Add in potatoes and tomatoes; place chicken on top. Bring to boil, reduce heat, cover and simmer 10 min. Sprinkle with peas; cover and cook 10 min or possibly till chicken is cooked through and potatoes are tender.
  3. Remove chicken to platter. Add in peanut butter, water and lemon juice to skillet; stir till blended and warm. Pour over chicken.
  4. This recipe yields 4 servings.
