Chicken Soba Noodle Soup

I decided to try a twist on the traditional chicken noodle soup that I usually prepare. So I gave it a twist.

Ingredients

  • 2 stalks lemongrass
  • 1 pound skinless organic chicken thighs
  • Coarse salt and ground black pepper
  • 1 small carrot, peeled and diced
  • 1 small onion, chopped
  • 2 garlic cloves, chopped
  • 1/2 ounce fresh ginger, peeled and minced (3 tablespoons)
  • 2 tablespoons soy sauce
  • 2 ounces soba noodles
  • 2 scallions, trimmed and cut into 1-inch lengths
  • 1 cup thinly sliced bok choy or other Asian greens
  • 1/4 cup chopped fresh cilantro or basil
  • Chinese five spice

Directions

  1. Add the chicken to a large pot with 4-6 cups of water, basil, 1 stalk of lemongrass, salt & pepper and boil until cooked all the way through.
  2. Once the chicken is cooked remove it and set it aside. Skim any fat that has accumulated on the top of the water.
  3. Add in all the other ingredients and cook until the broth is darker. About 30 minutes. Again you want to skim the top in case there is any fat accumulating.
  4. Add the chicken back in and simmer for another 7 minutes. Add the soba noodles, cook for 5 minutes then stir 5 times with either chop sticks or the handle of a long wooden or plastic spoon.
  5. Serve immediately and enjoy!
