Ingredients

  • Chicken Leg boneless 30 kg
  • Chicken Brest boneless 30 kg
  • Yogurt 3 kg
  • Tahina 500 gr
  • Orange Juice 3 liter
  • Lemon Juice 1 liter
  • Lemon Sliced 500 gr
  • Orange Sliced 500 gr
  • Cardamom Grind 50 gr
  • Coriander Grind 40 gr
  • Allspice Grind 30 gr
  • Cloves Grind 20 gr
  • Cinnamons stack 50 gr
  • Turmeric powder 60 gr
  • Bay leaf 30 gr
  • Mastika 10 grams
  • Rose Buds Dried 60 grams
  • Chopped Garlic 400 gr
  • Vinegar white 3 liter
  • Corn Oil 1 liter

Directions

  1. METHOD:
  2. * Mix all the ingredients, and marinate the chicken, for one or two days.
  3. *Start to arrange the chicken layers on the iron stack , then set up on the rotating Schawarma machine.
  4. *For beef schawarma add one kilo onion and remove turmeric from the marination. The rest is the same.
