Ingredients

  • 1 Semi-boneless chicken cut into quarters (You can substitute boneless breast if you’d like)
  • 4 links Italian sausage (cut into thirds)
  • 2 potatoes (cut into wedges)
  • 1 red onion (Cut in ½ inch cubes)
  • 1 red bell pepper (Cut into ½ inch cubes)
  • 10 cloves garlic (Crushed)
  • 3 Tbs dry oregano
  • 8oz red wine vinegar
  • 16oz white wine
  • 16oz diced tomato(Canned)

Directions

  1. In a large sauté pan over medium-high heat, sear chicken with salt and pepper. Place chicken skin side down and cook for 3 minutes or until browned .Repeat the same method for the other side. Remove chicken and set aside. In the same pan add garlic, onions, peppers, potatoes, and sausage. Cook 4 to 5 minutes constantly stirring. When ready add oregano, vinegar, wine, and tomatoes. Mix well and place chicken on top gently pressing down. Place in preheated oven at 375 for 30 to 40 minutes. Finish with a sprig of oregano on top.
