Chicken Salami Spaghetti Sauce

Ingredients

  • 1 1/2 c. Minced onion
  • 3/4 c. Minced green pepper
  • 3 Tbsp. Vegetable or possibly extra virgin olive oil
  • 2 x Cloves garlic, chopped fine
  • 1 can (1-lb) Italian plum tomatoes
  • 1/4 tsp Cayenne pepper
  • 1 can (15-ounce) tomato sauce
  • 1 can (6-ounce) tomato paste
  • 1 c. Red wine
  • 1 tsp Basil
  • 1 tsp Oregano
  • 1/2 tsp Rosemary
  • 1 1/2 tsp Salt
  • 1/4 c. Fresh parsley (or possibly dry)
  • 1/4 lb Hard salami
  • 2 lrg Chicken breasts
  • 1/2 lb Fresh mushrooms, sliced

Directions

  1. Cook onions & pepper in oil till soft. Add in garlic, tomato sauce, tomato paste, tomatoes, wine, basil, oregano, rosemary, salt, cayenne & parsley.
  2. Simmer 1 hour, stirring frequently. Dice raw chicken. Add in salami, chicken & sliced mushrooms to sauce & simmer 1 hour. Serve over cooked spaghetti.
