Ingredients
- 1 1/2 c. Minced onion
- 3/4 c. Minced green pepper
- 3 Tbsp. Vegetable or possibly extra virgin olive oil
- 2 x Cloves garlic, chopped fine
- 1 can (1-lb) Italian plum tomatoes
- 1/4 tsp Cayenne pepper
- 1 can (15-ounce) tomato sauce
- 1 can (6-ounce) tomato paste
- 1 c. Red wine
- 1 tsp Basil
- 1 tsp Oregano
- 1/2 tsp Rosemary
- 1 1/2 tsp Salt
- 1/4 c. Fresh parsley (or possibly dry)
- 1/4 lb Hard salami
- 2 lrg Chicken breasts
- 1/2 lb Fresh mushrooms, sliced

Chicken Salami Spaghetti Sauce
Servings: 8
Directions
- Cook onions & pepper in oil till soft. Add in garlic, tomato sauce, tomato paste, tomatoes, wine, basil, oregano, rosemary, salt, cayenne & parsley.
- Simmer 1 hour, stirring frequently. Dice raw chicken. Add in salami, chicken & sliced mushrooms to sauce & simmer 1 hour. Serve over cooked spaghetti.
