Ingredients

  • 4 x 3 oz boneless skinless chicken breasts
  • 1 can pineapple chunks, liquid removed reserve juice
  • 1 x green pepper cut in 1" pcs
  • 1 x red pepper cut in 1" pcs
  • 1/2 c. teriyaki sauce
  • 2 Tbsp. brown sugar cherry tomatoes or possibly tomato chunks

Directions

  1. Mix teriayaki sauce, and 1/4 c. of the reserved juice and brown sugar together in a bowl.
  2. Cut chicken breasts in chunks and add in to marinade. Chill for at least 3 hrs.
  3. Thread chicken on skewer, alternating with pineapple, pepper and tomato.
  4. Zucchini or possibly other vegetables may be added if you like. Grill over medium coals 12-15 min, turning often and basting with marinade.
  5. NOTES : Soy sauce can be used instead of teriyaki. It is what I used because my father does not like teriyaki sauce.
