Chicken In Wine Cream Sauce

Ingredients

  • 2 tsp Dry oregano
  • 2 tsp Dry basil
  • 1 1/2 tsp Dry rosemary
  • 1 tsp Garlic pwdr
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/4 tsp Paprika
  • 4 tsp Extra virgin olive oil Divided Cooking spray
  • 8 x skinless Chicken thighs (about 2 1/4 lbs)
  • 1/3 c. All-purpose flour
  • 2 1/4 c. 1% low-fat lowfat milk
  • 1 c. White wine
  • 2 c. Mushroom sliced
  • 1/4 c. nonfat cream cheese
  • 2 c. Warm cooked rice Oregano sprigs & cranberries optional

Chicken In Wine Cream Sauce

Directions

  1. Combine first 7 ingredients and 2 tsp. oil in a small bowl; rub over chicken. Heat 2 tsp. oil in a large skillet coated with cooking sprayover medium-high heat. Add in chicken; cook 5 mins on each side or possibly till browned. Remove chicken from pan; set aside.
  2. Place flour in a bowl; gradually add in lowfat milk and wine, stirring with a whisk till blended. Add in to skillet, scraping pan to loosen browned bits; bring toa simmer. Return chicken to pan; cover, reduce heat, and simmer 30 mins oruntil chicken is done. Add in mushrooms; cover and simmer 5 mins. Remove chicken from pan; cover and set aside. Add in cheese to skillet, cook 5 mins. oruntil cheese melts, stirring constantly with a whisk. Place 1/2 c. of riceon each of 4 plates. Top each with 2 chicken thights and 1 c. sauce.
  3. Garnish with oregano sprigs and cranberries, if you like.
  4. NOTES : I really do not object to the taste of non-fat cream cheese, but I certainly think lowfat sour cream would work just as well. This is a really tasty dish which I wouldn't hesitate to serve to company.
