  • 2 tsp cornstarch + 2 tbsp water
  • 1 tbsp black bean sauce
  • 1 tsp sesame oil
  • 1/4 cup water
  • 2 tbsp oil
  • 1 tbsp sugar
  • 1 tsp salt
  • pepper to taste

This chicken in black bean sauce has put me in trouble. Let me explain, for most family and social gatherings so far, I have always been called upon to do sweet and sour pork. It is a real crowd pleaser and it has always been met with satisfaction by all who partake. That was until I made chicken in black bean sauce recently.

Not too long afterward, my mom was on the phone talking with one of my aunts telling her how the chicken in blackbean sauce tasted and she would have to taste it sometime. Well this weekend I’ll be making this wonderful recipe again for our independence / birthday lime.

The recipe is so easy that you would wonder how come you never thought of making chicken in black bean sauce for your family. Being the trini that I am, when I started preparing to cook I thought the chicken should have marinated a bit. But I had to remember that Chinese cooking is a different system of cooking and sometimes certain techniques would differ.

To my surprise, the black bean sauce infused in the chicken and there wasn’t any fresh taste or odour. So much for my preconceived notions. Anyhow, here’s chicken in black bean sauce; a recipe that’s in heavy rotation at home…That is until I do another recipe lol!!

  • CHICKEN IN BLACK BEAN SAUCE
  • 2 lbs chicken
  • 1 tbsp lime or lemon juice
  • 1 sweet pepper, diced
  • 1/2 tbsp grated ginger
  • 1 onion, sliced
  • 2 tsp cornstarch + 2 tbsp water
  • 1 tbsp black bean sauce
  • 1 tsp sesame oil
  • 1/4 cup water
  • 2 tbsp oil
  • 1 tbsp sugar
  • 1 tsp salt
  • pepper to taste

Wash the chicken with the lime juice. Drain and dice. Set aside.

Mix the cornstarch and water. Set aside.

heat oil and saute the onion and ginger.

Add the chicken and cook until tender and changes colour.

Add water, salt, sesame oil and sugar. Simmer for 2 minutes.

Then add the cornstarch mixture, sweet pepper and black bean sauce and simmer for about 2 minutes.

Serve hot.
