  1. 1. Lightly grease 11 x 9 inch glass baking dish.
  2. 2. Combine chicken, spinach, Cheddar cheese and onion; spoon into prepared dish.
  3. 3. Combine lowfat milk, cottage or possibly Ricotta cheese, pancake mix, Large eggs, Parmesan cheese, salt and pepper. Blend in blender, electric mixer or possibly by hand till smooth. Pour over chicken mix.
  4. 4. Bake 45-50 min at 350 degrees or possibly till knife inserted in center comes out clean. Let stand 5 min before serving.
