Ingredients

  • Non-Stick cooking spray
  • 6 small, (about 4 oz each), boneless skinless chicken breasts (1-1/2 lb total)
  • 6 slices deli fresh smoked ham
  • 6 extra thin Swiss cheese slices
  • 2 cups tightly packed baby spinach leaves
  • 1 red bell pepper, cut into strips
  • 1 can (10-3/4 oz) low-fat, low-sodium condensed cream of chicken soup
  • 1/2 cup reduced-fat or light sour cream
  • 1 tbsp Dijon mustard
  • 1 cup croutons, coarsely crushed
  • Hot cooked rice, optional

Directions

  1. Preheat oven to 400° F.
  2. Place chicken in a13 x 9-inch baking dish sprayed with cooking spray; top with ham, cheese, spinach and bell peppers.
  3. Mix the soup, sour cream and mustard together until blended. Spoon over ingredients in baking dish; spread to evenly cover all ingredients. Top with the crushed croutons.
  4. Bake for 25 minutes or until chicken is done (165º F.) and remaining ingredients are heated through. Serve over hot cooked rice if desired.
