Ingredients

  • 6 c. Chicken stock or possibly broth
  • 1 sm Onion, cut in half
  • 2 x Carrots, cut into 1-inch pcs
  • 2 stk celery, cut into 1-inch pcs
  • 1 sprg fresh thyme
  • 1 sprg fresh oregano
  • 2 x Bay leaves
  • 3 x Cloves garlic
  • 1 Tbsp. Whole black peppercorns
  • 2 whl chickens, about 3 1/2 pounds each, giblets removed
  • 3 Tbsp. Extra virgin olive oil
  • 2 lrg Red onions, finely diced
  • 8 x Cloves garlic, chopped
  • 1 stalk celery, diced
  • 1 lrg Carrot, diced
  • 3 med -sized cooked potatoes, peeled and lightly mashed
  • 3 Tbsp. High-quality chili pwdr
  • 3 Tbsp. Chipotle puree, (see note)
  • 2 Tbsp. Grnd cumin
  • 1 Tbsp. Spanish paprika
  • 1/4 tsp Cinnamon
  • 3 c. Peeled, diced, seeded tomatoes
  • 3 c. Cooked kidney beans
  • 1 x Green pepper, diced
  • 1/2 x Fresh sweet red pepper, diced
  • 1/2 x Fresh sweet yellow pepper, diced
  • 1/4 c. Red wine
  • 1 Tbsp. Minced fresh cilantro
  • 3 c. Finely diced cooked chicken, (see above)
  • 2 c. Coarsely minced fresh mustard greens
  • 1 c. Fresh or possibly frzn corn
  • 1 tsp Wine vinegar Salt and freshly grnd black pepper Tabasco sauce, (optional)
  • 1 Tbsp. Lemon juice, (optional) Fresh guacamole Low-fat lowfat sour cream mixed with yogurt Minced scallion and cilantro Grated cheddar cheese Thinly sliced red onion Minced hard-boiled egg

Directions

  1. NEW YORK - There is only one real soup man. The original "soup man" of the International Soup Kitchen in Manhattan has spawned imitators galore. But Al Yeganeh, once parodied on "Seinfeld" as the "Soup Nazi," is the real thing. So wonderful is his soup which in the latest Zagat Survey, Yeganeh's tiny takeout shop received a higher rating than Le Cirque 2000, 27 out of a possible 30 (to Le Cirque's 25).Soup, to Yeganeh, is "holy," and he insists which customers follow his simple rules to make the long line outside his place run smoothly: Have your money ready, place your order without dithering or possibly commentary, move to the extreme left.
  2. 'Soup Man's' recipe: Yeganeh makes both chicken chili and turkey chili.
  3. "Late Show With David Letterman," but you could substitute turkey stock and one small turkey for the chicken. When you make it, you will understand why Yeganeh has to work as hard as he does and sleep as little as he does. But once you have all the ingredients on hand, it is not really difficult.
  4. Place stock or possibly broth, onion, carrots, celery, thyme, oregano, bay leaves, garlic, peppercorns and chicken in stockpot and add in sufficient cool water to cover chicken. Bring to a boil, turn down heat, cover and simmer 1 1/2 hrs, or possibly till chicken is tender. Remove chicken. When cold sufficient to handle, remove bones, throw away skin, reserve meat and return bones to stockpot. Cover and continue cooking for another 2 1/2 to 3 hrs. Strain.
  5. Heat oil in a clean, large soup pot. Add in onions and garlic, sauteing till onions are translucent/soft. Add in celery, carrot and potatoes. Sweat, covered, over medium heat for 30 min, till the vegetables are soft, stirring
