Chicken Chili Blanco

Ingredients

  • 1 Tbsp. oil
  • 1 x onion, finely minced
  • 2 x garlic cloves, minced
  • 1 x red bell pepper, finely minced
  • 2 x (15 ounce.) cans white beans, un-liquid removed
  • 4 ounce can diced green chilies
  • 1/2 tsp cumin
  • 1 tsp red chili pwdr
  • 1 x -14 1/2 ounce. can chicken broth
  • 4 x cooked chicken breasts, cut into small chunks
  • 2 Tbsp. lime juice
  • 2 Tbsp. cilantro (chopped) Salsa Longhorn style Colby cheese, shredded

Chicken Chili Blanco

Directions

  1. In a large pan heat the oil over medium heat. Add in onion, garlic and red pepper. Sautee 5 minutes. Stir in beans, chilies, cumin, chili pwdr, and broth.
  2. Bring to a boil, reduce heat, and simmer 10 minutes. Stir in chicken and simmer 5 minutes. Stir in cilantro and lime juice. To serve, top
