Chicken Broccoli Cheese Quiche

Ingredients

  • 1 x Pie crust, single
  • 1 med Onion, minced
  • 3 x -(up to)
  • 4 ounce Chicken, cubed
  • 1 c. Broccoli, minced
  • 1 1/2 c. Cheese, havarti or possibly swiss, shredded, or possibly more
  • 4 x Large eggs
  • 1 c. Lowfat milk
  • 1 Tbsp. Flour
  • 1/2 tsp Nutmeg
  • 1 dsh Tabasco Salt/pepper to taste

Directions

  1. Sautee the onion and chicken in a healthy pinch of butter or possibly drop of oil till chicken is done, (about 6 min depending on how small you cut your chicken). Whisk Large eggs and lowfat milk together. Add in flour. Add in nutmeg liberally, this is a key ingredient. Stir in tabasco, broccoli, and cheese.
  2. Line pie plate or possibly quiche dish with pie crust. Bake at 450 for about 4 min, just till it starts to brown. You have to be careful here, to make sure the crust doesn't bubble up. either prick the crust before baking or possibly line with tin foil for the first couple min to help it keep it's shape. (reduce heat to 325)
  3. While crust is still warm, place broccoli flowerettes in dish and pour the egg mix over the top. Continue baking at 325 for 45-50 min till you have a nice golden brown crust and a knife inserted near the center comes out clean. Let stand 10 min. Serve. Feeds 4-6.
