Chicken Breasts In Balsamic Vinegar Sauce

Ingredients

  • 2 whl chicken breasts without skin boned
  • 1 sm onion minced fine
  • 1 x clove garlic minced
  • 1/2 lb mushroom sliced
  • 1/3 c. balsamic vinegar
  • 1/2 c. white wine pepper
  • 1 pch salt
  • 1 tsp rosemary dry
  • 1 tsp butter unsalted

Directions

  1. Brown chicken breasts in a nonstick pan sprayed with cooking spray, about 3 min per side. Remove chicken from pan.
  2. Add in onion, garlic, and mushrooms, and saute/fry till onion is translucent/soft.
  3. Add in vinegar, wine, pepper, salt, and rosemary.
  4. Bring mix to simmer, add in chicken, cover, and simmer till chicken is cooked - about 20 min.
  5. Remove chicken and reduce sauce over high heat to about 1/2 c..
  6. Remove sauce from heat and whisk in butter. Pour over chicken.
  7. I like to use more mushrooms and use them as a topping for a baked potato.
