Ingredients

  • 3 lb boneless, skinless chicken breasts
  • 1/2 c. butter
  • 1 lrg onion
  • 4 x ribs celery, minced
  • 2 x green bell peppers, minced
  • 1 lb sliced mushrooms
  • 3 c. chicken broth
  • 1 lrg can tomato juice
  • 1/2 c. stuffed green olives
  • 3 Tbsp. chili pwdr
  • 3 tsp salt
  • 1 lb dry spaghetti
  • 1 lb processed American cheese, cut into cubes
  • 1/2 c. dry sherry, optional

Directions

  1. Poach chicken breasts. Chop cooked chicken and set aside. In a large pan, heat butter and saute/fry the onion, celery, peppers and mushrooms. Add in chicken, chicken broth, tomato juice, olives, chili pwdr and salt. Simmer this mix for 30 min.
  2. Preheat oven to 350 F.Meanwhile, cook the spaghetti in boiling water till tender, about 6 min.
  3. Drain spaghetti and fold into simmering sauce. Stir in cheese and sherry. Place
