Chicken and rice yum Pie

This is a pie with a difference...which is made in the microwave.Very easy and loved by kids and teenagers alike...its a super simple yummy dish for those cold winters or rainy nights.

Ingredients

  • 3 cups long grain rice(about 750 gm)
  • 500 gm Frozen Chicken Tenders
  • 2 tsp salt
  • 1 tsp pepper powder
  • 5 and 3/4 cup water
  • 2 eggs
  • 3 cups grated cheese
  • 1 large onion,chopped fine
  • 2 cup potato grated
  • 2 tbsp oil
  • 4 tbsp water
  • 1 tbsp finely choped parsely
  • 1 tbsp paprika

Directions

  1. Wash rice well,drain and combine with salt and water in a microwave safe cooker and boil covered with kitchen towel for about 20 mins or until all the water is absorbed.Let it rest covered for 5 minutes
  2. Fluff up the rice
  3. Beat eggs and mix into rice with 1.5 cups cheese
  4. Press into greased bottom and sides of a deep microwavable pie dish
  5. In another bowl take chopped onion,stir in 2 tbsp oil and 4 tbsp water and cook on low for 2 minutes and add grated potato and cook for further 2 minutes
  6. In a separate bowl,add chicken tenders,a pinch of salt and just enough water to cover the chicken pieces and cook for about 12 minutes or till tenders are done cooking.
  7. Drain the chicken tenders and chop them a bit more smaller.
  8. Drain the onion and potato grates fully and layer them evenly all over the rice followed by the cooked and drained chicken tenders.Give it a gentle press.Sprinkle all over with left over 1.5 cups of cheese,sprinkle paprika and put it back in the microwave and cook covered loosely for 10 minutes.
  9. Garnish with parsley and serve warm.
