Chicken and Rice Soup

I bought myself an electric pressure cooker and love using it to make soups. By adjusting it to different settings I am able to make a great pot of soup in 1/4 the time of a crockpot. This is one I put together yesterday.

Ingredients

  • 1 cup brown rice mixed with wild rice
  • 4 cups water
  • 1 cup celery diced
  • 1 cup carrots diced
  • 1 onion diced
  • 1 cup mushrooms
  • 1 32 oz. container chicken broth
  • Garlic and sea salt to taste
  • Pepper to taste
  • Rotisserie Chicken - I used lemon pepper - tore into bite size pieces.

Directions

  1. Rice and Water - Pressure cooker set for 20 minutes on low pressure.
  2. Add celery and carrots - Pressure cooker with rice set for 10 minutes on low pressure.
  3. Add rest of ingredients - Pressure cook set for 3 minutes on low pressure. Then on warm until served.
