Chicken And Potatoes Dinner Recipe

Ingredients

  • 1/4 c. minced green peppers
  • 1/2 c. minced onions
  • 1 1/2 c. diced Velveeta cheese
  • 7 med potatoes sliced (7 to 8) salt & pepper to taste
  • 1 can cream of celery soup
  • 1 x soup can lowfat milk
  • 3 whl boneless skinless chicken breasts (3 to 4)

Directions

  1. Place layers of green peppers, onions, cheese & potatoes with salt & pepper in bottom of slow cooker.
  2. Place chicken breasts on top, sprinkle with salt.
  3. Combine soup & lowfat milk and pour into slow cooker, pushing meat into liquid.
  4. Cover and cook on HIGH 1 1/2 hrs. Reduce temperature to LOW and cook 3-4 hrs. Test which potatoes for softness. If not fully cooked tests again about an hour later.
  5. *Note: I make this on LOW all day long with no problems.
  6. I also use frzn chicken so it doesn't get too dry.
