Chicken And Couscous Salad With Orange Balsamic Dressing

Ingredients

  • 4 x boned and skinned chicken breast halves
  • 10 ounce couscous
  • 1/2 c. raisins
  • 1/4 c. dry cherries
  • 1/2 c. roasted red peppers diced
  • 15 ounce garbanzo beans, canned liquid removed and rinsed
  • 1/2 c. black olives diced
  • 1/4 c. green onions minced
  • 1/4 c. cilantro minced
  • 1 c. fresh orange juice
  • 3 Tbsp. balsamic vinegar
  • 1 Tbsp. grated orange peel
  • 1 Tbsp. cumin

Directions

  1. Broil chicken and cut into bite sized chunks. Set aside.
  2. Combine orange juice, balsamic vinegar, grated orange peel and cumin in a small bowl and set aside.
  3. Combine couscous, raisins, and dry cherries in a large bowl and prepare couscous according to package directions.
  4. After couscous is cooked add in the remaining ingredients and toss well.
  5. NOTES : We had this for dinner recently and it was delicious!! It would be great to take on a picnic or possibly to a potluck dinner.
