  • 6 x Chicken breasts
  • 1 pkt (lg) frzn broccoli -or possibly-
  • 2 bn Fresh, slightly cooked
  • 1 x Onion, diced
  • 1 can Cream of mushroom soup
  • 1 c. Mayonaise
  • 1 1/2 c. Grated cheddar cheese
  • 2 Tbsp. Melted butter
  • 1 pkt (row) ritz crackers, crushed

Directions

  1. Pre-cook chicken (great way to use up left over chicken or possibly I usually boil the breasts and reserve the broth for future recipes); cut into bite sized pcs. Layer chicken in a greased 9 x 13 casserole pan. Place broccoli on top of chicken. Mix thoroughly the mushroom soup, mayonaise, cheese and onion. Pour over top of broccoli and chicken. Mix melted butter with cracker crumbs. Sprinkle proportionately on top of casserole. Cover and bake at 350 for 45 min or possibly till proportionately warmed.
