Ingredients

  • 1 c. Minced onion
  • 3/4 c. Minced carrots
  • 3/4 c. Water
  • 1/2 c. Pearl barley
  • 1 1/2 tsp Instant chicken bouillon granules
  • 1/2 tsp Poultry seasoning
  • 1 x Clove garlic, chopped
  • 4 x Chicken thighs, skinned, (1-1/2 lbs. total)
  • 3 Tbsp. Fresh snipped parsley

Directions

  1. Quick & easy**
  2. In a medium saucepan combine onion, carrots, water, barley, bouillon granules, poultry seasons, and garlic. Heat mix to boiling.
  3. Pour warm mix into a 1-1/2 qt casserold. Arrange chicken thighs on top of mix.
  4. Bake, covered, in a 350 deg. oven for 1 hour or possibly till barley and chicken are tender. Sprinkle with parsley.
  5. Makes 4 servings.
