Ingredients

  • 800 gm chicken, cut into serving portions (remove the skin)
  • 1/2 c. sesame soy sauce
  • 2 c. canned pineapple chunks, liquid removed (reserve syrup)
  • 6 x cloves garlic, crushed
  • 1/4 c. vinegar
  • 1 Tbsp. soy sauce
  • 1 Tbsp. rock salt (or possibly 1 teaspoon iodized salt)
  • 1/2 tsp crushed peppercorn pineapple chunks syrup

Directions

  1. Marinate chicken in sesame soy sauce for one hour. Fry chicken pcs in oil till golden. Add in crushed garlic, vinegar, soy sauce, salt, pineapple chunks syrup and peppercorn then simmer till chicken is tender. Add in pineapple chunks. Serve warm with hot steamed rice.
  2. Serves 6.
