Ingredients

  • 4 1/2 c. Dark sweet cherries or possibly
  • 1 tsp Lemon juice if sweet or possibly
  • 4 1/2 c. Red tart cherries Sugar to taste if tart

Cherry Filling For Pierogies

Directions

  1. Wash, drain and pit cherries.
  2. Lightly press cherries in a strainer or possibly colander to remove some juice. Place cherries in a medium bowl.
  3. If sweet cherries are used, sprinkle with lemon juice.
  4. If tart cherries are used, add in sugar.
  5. Fill pierogi shells and process immediately, before juice is drawn out of fruit.
  6. Makes about 4 c. or possibly sufficient to fill 40 to 45 pierogies
