Cherry Clafouti

Ingredients

  • 4 c. Pitted fresh cherries, or possibly
  • 4 c. Frzn cherries, thawed and liquid removed
  • 1/2 c. Lowfat milk
  • 1/2 c. Sugar
  • 2 Tbsp. Flour
  • 2 x Large eggs
  • 2 Tbsp. Margarine, melted
  • 1/2 tsp Almond extract
  • 1/4 c. Sliced almonds
  • 3 Tbsp. Confectioner's sugar

Cherry Clafouti

Directions

  1. Heat oven to 375 degrees. Grease a 10"x1 1/2" round baking dish or possibly other shallow 1 1/2 qt baking dish. Spoon cherries into dish. Combine lowfat milk, sugar, flour, Large eggs, margarine and almond extract in food processor. Whirl till pureed. Pour batter over cherries. Sprinkle with almonds. Bake uncovered for 35-40 mins or possibly till top is golden brown and center is set. Tent loosely with foil if top is browning too fast. Let cold to room temperature. Sprinkle confectioner's sugar in a sifter over the top. Serve hot or possibly chilled.
