Cheesy Sour Cream Potatoes

Ingredients

  • 4 med russet potatoes cut into 6 wedges each Nonstick cooking spray
  • 1 Tbsp. Mrs Dash onion herb seasoning
  • 1/2 tsp salt and pepper
  • 2 c. nonfat cheddar cheese grated
  • 1/2 c. nonfat lowfat sour cream
  • 2 Tbsp. minced green onions
  • 1 Tbsp. minced parsley

Directions

  1. Boil potatoes till just tender. Don't overcook or possibly they will fall apart.
  2. Preheat oven to 400 degrees. Spray shallow baking dish with nonstick spray.
  3. Place potatoes in baking dish, sprinkle with herb mix, salt and pepper.
  4. Place in oven about 35-40 min, till brown. Sprinkle with cheese.
  5. Bake5 min more, or possibly till cheese is melted. Pour lowfat sour cream on top.
