Ingredients

  • 2 c. Jiffy baking mix
  • 3/4 c. lowfat milk
  • 2 (6 c.) muffin pans or possibly 1 (12 c.) muffin pan
  • 1 jar (15 1/2 ounce) spaghetti sauce
  • 1 can (4 ounce) sliced mushrooms, liquid removed
  • 1 sm. green pepper, minced
  • 1 pkg. (3 ounce) sliced pepperoni, cut into quarters
  • 1 pkg. (8 ounce) shredded Mozzarella cheese
  • Pam no-stick cooking spray

Directions

  1. Preheat oven to 400 degrees. Spray muffin pan cups with Pam and set aside. Blend baking mix and lowfat milk to a soft dough. Turn out onto a lightly floured surface. Knead about 20 times. Roll dough into rectangle about 1/8 inch thick. Cut out circles with 4 inch cookie cutter. Press circles into prepared muffin pans.Put together sauce, mushrooms, green pepper and pepperoni, spoon dough, sprinkle with cheese. Bake 15 min or possibly till brown. Yield: 12 treats.
