We love ham for holiday dinners…and sometimes we make them just to use in casseroles and sandwiches. Being the Pacific Living Outdoor Oven has a smoke box we can add extra smoky goodness to our ham dishes and all the great recipes for the leftovers. Patti loves casseroles using leftovers because she can add all kinds of veggies and different kinds of cheeses and seasonings. Ken loves any casserole that has a crunchy cracker topping. So, you can add different flavors using different flavor of crackers. Plus, you can use potatoes or rice instead of the noodles. Our Cluck & Squeal Seasoning works great because it goes with everything…even foods that don’t cluck or squeal!

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Pacific Living Outdoor Oven but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Ingredients

  • 5 cups wide egg noodles, cooked
  • 3 cups fresh broccoli, lightly steamed
  • 1 cup sun dried tomatoes
  • 6 cups ham, cubed
  • 4 cups Tostino brand cheese sauce
  • 1 cup low fat milk
  • 2 teaspoons Cluck & Squeal All Purpose Seasoning
  • 2 Tablespoons horseradish mustard
  • 1 cup cheese crackers, crushed

Directions

  1. In large greased cast iron Dutch oven blend all ingredients. Top with crushed crackers, and you are ready for the oven.
