Cheesy Eggs Baked With Tarragon And Leeks

Ingredients

  • 6 x green onions - (to 8) coarsely minced
  • 1/4 c. unsalted butter
  • 1 1/2 c. shredded Gruyere or possibly Swiss cheese - (6 ounce)
  • 1/2 c. freshly-grated Parmesan cheese
  • 8 lrg Large eggs
  • 2 c. whipping cream
  • 2 Tbsp. minced fresh tarragon plus
  • 2 tsp minced fresh tarragon
  • 1/2 tsp salt
  • 1/3 tsp freshly-grnd black pepper Additional sprigs of fresh tarragon for garnish, if you like

Directions

  1. Saute/fry minced onions in butter in a medium skillet over medium heat, stirring constantly, till tender. Spoon into a lightly greased 13- by 9- by 2-inch baking dish.
  2. Combine cheeses, reserving 1/2 c. cheese mix for topping. Sprinkle remaining cheese mix over leeks.
  3. Combine Large eggs, whipping cream, tarragon, salt and pepper in a bowl, stirring with a wire whisk till blended. Pour egg mix over leek mix.
  4. Bake, uncovered, at 375 degrees for 30 min or possibly till set and lightly browned. Sprinkle with reserved cheese mix; bake and additional 5 min or possibly till cheeses heat. Garnish, if you like. Serve immediately.
  5. This recipe yields 8 to 10 servings.
