Cheese And Onion Flan With Peanut Pastry

Ingredients

  • 6 ounce Self-raising wholewheat flour
  • 3 ounce Margarine
  • 2 Tbsp. Crunchy USA peanut butter
  • 1 Tbsp. Water, (1 to 2)
  • 1 Tbsp. Groundnut, (peanut) oil
  • 2 x Onions, sliced thinly
  • 1 x Free-range egg
  • 1/4 pt Lowfat milk Salt and pepper
  • 3 ounce Mild, medium fat vegetarian cheese, grated
  • 1 ounce USA peanuts, minced

Cheese And Onion Flan With Peanut Pastry

Directions

  1. 1. Place the flour in a bowl, add in the margarine and rub in till the mix resembles fine breadcrumbs. Stir in the peanut butter and water and mix to create a hard dough. Knead lightly, the roll out and line an 8m flan dish.
  2. 2. Heat the oil in a pan, add in the onion and fry gently till very soft, about 5 min. Cold slightly. Beat together the egg, lowfat milk, salt and pepper.
  3. 3. Place the onion in the flan case and pour the lowfat milk mix over the top. Sprinkle with peanuts and cheese. Bake at 200 C/400 F/gas mark 6 for 15 min, then reduce temperature to 180 C/350 F/gas mark 4 for a further 25-30 min till the filling is set and golden. Serve hot or possibly cool.
