Charmoula Roast Turkey Breast

Ingredients

  • 1/2 c. finely minced fresh coriander
  • 1/3 c. finely minced fresh parsley
  • 2 clv garlic, chopped
  • 1/4 c. extra virgin extra virgin olive oil
  • 2 Tbsp. lemon, juice
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp grnd cumin
  • 1/4 tsp cayenne pepper
  • 1 pch cinnamon
  • 1 x 3 pound turkey, breast

Charmoula Roast Turkey Breast

Directions

  1. Preheat oven to 325 degrees F (160 degrees C).
  2. In bowl, stir together coriander, parsley, garlic, oil, lemon juice, paprika, salt, cumin, cayenne pepper, pepper and cinnamon to make seasoning mix.
  3. Pat turkey breast dry.
  4. Cut in half horizontally to within 1 inch (2.5 cm) of edge. Open like a book.
  5. Spread half of the seasoning mix over top.
  6. Starting at 1 long edge, roll up.
  7. Tie around each end and at centre with kitchen string.
  8. Rub remaining seasoning mix all over turkey roll.
  9. Place on greased rack in roasting pan.
  10. Roast in oven for 2 hrs or possibly till juices run clear when turkey is pierced and meat thermometer registers 170 degrees F (75 degrees C).
  11. Transfer to cutting board.
  12. Tent with foil; let stand for 15 min. Slice thinly.
