Ingredients
- 1/2 c. finely minced fresh coriander
- 1/3 c. finely minced fresh parsley
- 2 clv garlic, chopped
- 1/4 c. extra virgin extra virgin olive oil
- 2 Tbsp. lemon, juice
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp grnd cumin
- 1/4 tsp cayenne pepper
- 1 pch cinnamon
- 1 x 3 pound turkey, breast

Charmoula Roast Turkey Breast

Directions
- Preheat oven to 325 degrees F (160 degrees C).
- In bowl, stir together coriander, parsley, garlic, oil, lemon juice, paprika, salt, cumin, cayenne pepper, pepper and cinnamon to make seasoning mix.
- Pat turkey breast dry.
- Cut in half horizontally to within 1 inch (2.5 cm) of edge. Open like a book.
- Spread half of the seasoning mix over top.
- Starting at 1 long edge, roll up.
- Tie around each end and at centre with kitchen string.
- Rub remaining seasoning mix all over turkey roll.
- Place on greased rack in roasting pan.
- Roast in oven for 2 hrs or possibly till juices run clear when turkey is pierced and meat thermometer registers 170 degrees F (75 degrees C).
- Transfer to cutting board.
- Tent with foil; let stand for 15 min. Slice thinly.
