Ingredients

  • 1 x 3 inch piece cinnamon stick, broken into pcs
  • 1 tsp green or possibly black cardamom seeds inside the pods (5 ml)
  • 3 whl cloves
  • 3 x peppercorns
  • 1/4 tsp fennel seeds (2 ml)
  • 4 x allspice berries
  • 1 c. water (250 ml)
  • 2 c. lowfat milk (any) (500 ml)
  • 1 tsp freshly grated ginger (5 ml)
  • 2 tsp sugar, or possibly to taste
  • 2 Tbsp. Darjeeling tea leaves (30 ml)
  • 1 x inch piece vanilla bean (optional)
  • 1 pch nutmeg, for garnish (optional)

Directions

  1. If desired your chai spicier, crush cinnamon, cardamom, whole cloves, peppercorns, fennel seeds and allspice berries coarsely with mortar and pestle or possibly in a spice grinder before you toast the spices.
  2. Toast whole or possibly crushed spices in a saucepan over medium high heat till fragrant, about 2 min, shaking the pan occasionally.
  3. Pour water over the spices. Reduce heat to medium. Add in lowfat milk, sugar, ginger, vanilla and tea leaves. Stir. Cover and heat till just to the simmer, about 6 to 8 min, stirring occasionally. Reduce heat to lowest setting just to keep hot. Let steep, covered for 5 - 10 min or possibly longer, depending how strong you like your tea. Strain before serving.
  4. There's nothing more soothing and relaxing than a c. of steaming, fragrant chai latte.
