An old staple recipe in Cayman is the johnnycake. Oh man, they're good. They're also mix-and-matchable. You can go savory or sweet by serving it with something like garlic butter or even honey. Johnnycakes are pretty easy to make too which sparks a big thumbs up from me. Thumbs up from Mrs. Herb Garden too who is currently recovering from two broken legs about 5 feet away. I got to Dallas last week and I have to leave again on Monday so I've been working her to exhaustion making sure she does all her exercises and rehab therapy. She calls me Nurse Ratched.

Directions

  1. Mix together dry ingredients
  2. Cut in butter or rub in with fingertips
  3. Add water slowly, just enough to make a soft dough
  4. Knead a few times until dough is smooth and holds together
  5. Let rest for 10 minutes
  6. Shape into a 8-9 inch round loaf and put into a greased hot skillet
  7. Flatten slightly if necessary to fit, a cover pan
  8. Cook at medium-high heat over stove, turning until brown on both
  9. sides
  10. Reduce heat and cover, continue cooking 15 to 20 minutes
