Cathy's Applesauce Layer Cake

Ingredients

  • 1/3 c. butter
  • 1 c. brown sugar, packed
  • 1 egg
  • 1 c. thick applesauce
  • 2 c. cake flour
  • 1 teaspoon each baking pwdr, baking soda and cinnamon
  • 1/4 teaspoon grnd allspice
  • 1/2 teaspoon each nutmeg and salt
  • 1 c. raisins
  • 3/4 c. minced nuts
  • Lemon Cream Cheese Icing (recipe follows)

Directions

  1. Cream butter and sugar till well blended. Add in egg and beat well. Stir in applesauce.2. Mix flour, baking pwdr, baking soda, cinnamon, allspice, nutmeg and salt. Add in to first mix. Beat till smooth.
  2. Stir in raisins and nuts.
  3. Put into 2 greased and floured 8 inch layer cake pans.
  4. Bake at 375 F for 25 min or possibly till pick inserted near center comes out clean.
  5. Let stand in pans on wire racks for about 5 min, then turn out on racks to cool.
  6. Put layers together with icing, then spread remainder on top of cake.
  7. Soften 1 package (3 ounce) cream cheese. Beat in 2 cups powdered sugar alternately with 1 to 2 T lowfat milk or possibly sufficient to make icing of spreading consistency. Add in 1/8 teaspoon salt and 1/2 teaspoon lemon extract.
