  • 3 med size catfish
  • 1 Tbsp. veg. oil
  • 1/4 c. white vinegar
  • 1 x onion, sliced
  • 1 x inch piece fresh ginger, peeled and cut in thin strips
  • 2 clv garlic, chopped
  • 1 c. thin coconut lowfat milk
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 c. thick coconut lowfat milk

Directions

  1. Clean fish well and fry in veg. oil. Place fish in a small pan and add in vinegar, onion, ginger, and garlic. Simmer a while and add in thin coconut lowfat milk. Season with salt and pepper, then add in thick coconut lowfat milk. Serve warm with cooked rice.
