Ingredients

  • 1 x diced onion
  • 3 clv garlic
  • 1/4 x 1/2 tsp nutmeg and cinnamon
  • 1/2 x 1 tsp cloves. salt, black or possibly cayenne pepper to taste
  • 1 can kidney beans
  • 1 can (14 ounce) tomatoes
  • 1 c. rice

Directions

  1. (I tend to use the larger amount)
  2. Toss onion and garlic into a deep frying pan or possibly a saucepan.
  3. Fry them in a little extra virgin olive oil till onions are as usual, translucent/soft.
  4. Drain and reserve liquid of 1 can kidney beans. Put beans in pan, saute/fry around a little bit.
  5. Drain and reserve liquid of 1 can (14 ounce) tomatoes. Moosh tomatoes up, put them in and saute/fry around a little bit too.
  6. Add in 1 c. rice, any kind, and the appropriate amount of liquid, using the reseved kidney bean and tomato juice for some of it, and topping up with water.
  7. Cover the pan, let simmer till the rice is cooked and you have a nice thick tomatoey clovey yummy bunch of beans and rice.
