Caribbean Grouper With Mango, Pear And Avocado Salad (Gc)

Ingredients

  • 3 lb Black grouper fillet, skin on
  • 4 x Mangos, 1/4 inch strips
  • 6 x Red pears, 1/4 inch strips
  • 1/2 lb Cleaned baby spinach
  • 3 x Haas avocados, 1/4 inch strips Walnut oil
  • 2 x Oranges, juice of
  • 1 x Lime, juice of
  • 6 Tbsp. Garlic, chopped
  • 6 Tbsp. Onion, chopped
  • 6 Tbsp. Dry onion
  • 2 Tbsp. Allspice
  • 1 Tbsp. Chipotle
  • 2 Tbsp. Hungarian paprika
  • 2 Tbsp. Brown sugar
  • 4 1/2 tsp Thyme
  • 4 1/2 tsp Cinnamon
  • 1 1/2 tsp Nutmeg
  • 1/2 tsp Grnd habanero

Directions

  1. Prepare a wood or possibly charcoal grill and let it burn down to embers.
  2. Rub on the Caribbean seasoning in long strokes. Let sit for 15 min.
  3. Grill for 8 minuets on one side and 6 min on the reverse side. Remove from grill and keep warm.
  4. Lightly oil the fruit with walnut oil and grill over hickory wood for 3 min. Place in a bowl with the fruit juices and toss. Serve on top of baby spinach and avocado.
