Caramel Cake and Homemade Vanilla Ice Cream Recipe
Ingredients
- 2 sticks unsalted butter, room temperature, plus more for pans
- 1 ½ cups all-purpose flour, plus more for pans
- 1 ½ cups cake flour (not self-rising)
- 1 TBS baking powder
- ½ tsp salt
- 1 ¾ cups sugar
- 4 large eggs ( separated, whites beaten until stiff peaks form)
- 2 tsp pure vanilla extract
- 1 ¼ cups milk ( I used 4 oz sour cream 6 oz sour milk)

%20I%20realize%20that%20I%20only%20have%204%20ounces%20of%20sour%20cream%20and%20I%20need%20eight.%20Another%20trip%20to%20the%20store%20wasn%E2%80%99t%20happening%20at%20this%20point%20so%20I%20start%20searching%20for%20sour%20cream%20substitutes.%20Yogurt%20seems%20to%20be%20the%20numerous%20undo%20substitution,%20and%20I%20didn%E2%80%99t%20have%20that%20either.%20Expletive,%20expletive,%20expletive!!%20So%20now%20I%20start%20searching%20for%20another%20yellow%20cake%20recipe%20that%20is%20close%20to%20Sylvia%E2%80%99s.%20The%20biggest%20difference%20in%20her%20recipe%20is%20that%20she%20beats%20the%20egg%20whites%20until%20stiff%20peaks%20form%20and%20then%20folds%20them%20in%20after%20all%20the%20other%20ingredients%20have%20been%20added.%20And%20there%20was%20still%20that%20sour%20cream%20thing.%3C/p%3E%3Cp%3EAt%20this%20point%20I%E2%80%99m%20getting%20cranky%20and%20frustrated%20and%20just%20want%20to%20bake%20already.%20I%20land%20on%20a%20Martha%20recipe%20for%20yellow%20cake%20and%20decide%20that%20I%E2%80%99m%20going%20to%20do%20a%20Martha/Sylvia%20mash-up.%3C/p%3E%3Cp%3EThe%20recipe%20was%20adapted%20from%20Martha%20Stewart%20and%20I%20used%20the%204%20oz%20of%20sour%20cream%20I%20had%20on%20hand%20and%20added%20to%20it%206%20oz%20of%20sour%20milk.%20With%20fingers%20crossed%20I%20should%20add.%20I%20used%20Sylvia%E2%80%99s%20method%20of%20adding%20the%20beaten%20egg%20whites%20at%20the%20end.%20The%20cake%20came%20out%20amazing%20and%20I%20was%20ready%20to%20declare%20it%20Happy%20Dance%20Day%20for%20everyone.%20That%20was%20until%20I%20made%20the%20caramel%20frosting.%3C/p%3E%3Cp%3EOnce%20again,%20I%20used%20the%20Martha%20Stewart%20recipe%20for%20caramel.%20I%E2%80%99ve%20made%20it%20several%20times%20and%20with%20great%20success.%20I%20even%20had%20all%20the%20ingredients.%20It%20is%20a%20long%20drawn%20out%20process%20but%20worth%20it.%20After%20the%20caramel%20has%20reached%20the%20perfect%20temperature%20you%20set%20it%20aside%20for%2015%20minutes%20and%20then%20add%20the%20butter%20and%20beat%20it%20until%20the%20desired%20consistency.%20Guess%20who%20decided%20to%20go%20upstairs%20and%20get%20caught%20up%20in%20a%20Julia%20Robert%E2%80%99s%20movie%20marathon%20and%20forget%20about%20the%20recipe.%20Oh%20don%E2%80%99t%20get%20me%20wrong,%20I%20went%20downstairs%20before%20I%20went%20to%20bed%20to%20turn%20out%20the%20lights%20in%20the%20kitchen%20and%20take%20a%20peak%20at%20the%20caramel.%20That%2015%20minute%20rest%20period%20was%20the%20furthest%20thing%20from%20my%20mind,%20obviously.%3C/p%3E%3Cp%3EThe%20next%20morning%20I%20went%20down%20to%20start%20the%20ice-cream%20and%20frost%20the%20cake%20and%20was%20met%20with%20a%20bowl%20of%20crystallized%20caramel.%20Expletive,%20expletive,%20expletive!%20I%20tried%20warming%20it%20in%20the%20microwave,%20it%20didn%E2%80%99t%20work.%20I%20tried%20adding%20butter%20and%20warming%20it%20some%20more,%20it%20didn%E2%80%99t%20work.%20I%20had%20half%20melted%20crystallized%20caramel.%20The%20last%20thing%20I%20wanted%20to%20do%20was%20start%20all%20over%20again.%20Back%20to%20the%20internet%20I%20went.%20I%20found%20a%20forum%20for%20people%20who%20like%20me%20hadn%E2%80%99t%20paid%20attention%20to%20what%20they%20were%20doing%20when%20making%20caramel,%20and%20I%20found%20the%20solution.%3C/p%3E%3Cp%3EI%20scraped%20the%20caramel%20back%20into%20the%20pot%20and%20added%20a%20%C2%BC%20cup%20of%20water.%20Put%20the%20lid%20on%20the%20pot%20and%20turned%20the%20heat%20to%20medium.%2020%20minutes%20later%20I%20had%20silky%20smooth%20caramel.%20THIS,%20time%20I%20stayed%20put%20and%20waited%20out%20the%2015%20minutes.%20Then%20I%20added%20the%20butter%20and%20whipped%20the%20caramel%20into%20something%20so%20luscious%20I%20think%20Martha%20would%20have%20been%20jealous.%20I%20ate%20the%20first%20and%20the%20last%20piece%20of%20cake%20and%20it%20was%20good%20to%20the%20last%20drop.%3C/p%3E%3Cp%3EThankfully%20the%20ice-cream%20went%20off%20without%20a%20hitch.%20The%20other%20cool%20thing%20about%20the%20ice%20cream%20(no%20pun%20intended)%20was%20that%20Gabbi%20loved%20it.%20There%E2%80%99s%20a%20tiny%20bit%20left%20and%20I%E2%80%99m%20sure%20she%E2%80%99ll%20polish%20it%20off%20when%20she%20comes%20home%20from%20school%20today.%20Thanks%20for%20hanging%20in%20here%20with%20me%20the%20links%20for%20the%20original%20yellow%20cake,%20caramel%20frosting%20and%20ice%20cream%20are%20at%20the%20end%20of%20the%20post.%3C/p%3E%3Cp%3EYellow%20Cake%20%E2%80%93%20Adapted%20from%20Martha%20Stewart%20and%20Sylvia%20Weinstock%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0.%20Butter%20two%208-by-2-inches%20round%20cake%20pans;%20line%20the%20bottoms%20with%20parchment%20paper.%20Butter%20parchment,%20and%20dust%20with%20flour,%20tapping%20out%20excess;%20set%20aside.%20Into%20a%20medium%20bowl,%20sift%20together%20flours,%20baking%20powder,%20and%20salt;%20set%20aside.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20an%20electric%20mixer%20fitted%20with%20the%20paddle%20attachme
